Vineyards

The healthiest bunches are hand picked and sorted in the last week of February. Three plots covering 3.5 Hectares at 350m of altitude on the south west facing slopes. The vines of average age 10 - 14 years are planted at a densily populated 6000 vines per hecacre and trained in the traditional Cordon system

Vinification & Aging

15% whole bunches are hand selected on sorting tables and fermented in stainless steel vats.at 22 - 28 degrees for 10 days on the the skins. The rest is destemmed are fermented in oak open vats for 14 days. After malolactic fermentation the wine of about 13.5% is matured for 14 months in 228L French oak barrels with 30% new wood..

Style & Marturity

The Feldspar Pinot Noir has a bright red colour. The bouquet is complex with recalling wild berry, spice, sour cherries and violets. On the palate the wine shows medium body with fruit flavours balanced elegantly by tannins in a long finish

Vineyards

Boasting some of the highest planted vines in the Cape Winelands, Chamonix has around 50 hectares under vineyard. As purists we have always believed that to produce a wine of true character, it is essential that nature be the primary winemaker. Our farm is blessed with cool breezes during the hot summer months and stony, clay-rich soil, giving our wines their unique personality and style. A philosophy of minimal intervention and environmentally conscious farming methods are just some of our secret ingredients. All our fruit is hand-selected, and we follow traditional methods such as making use of spontaneous fermentation and no acidification. Organic compost and mulch are ploughed back into the soil, while our use of green-harvesting (low yields per hectare) ensures that our vineyards are not over-produced. Our philosophy of working hand-in-hand with nature to create unique wines and spirits carries through into the cellar, where our small, hands-on team approach their work with passion and creativity. The end result is a product that is pure, natural and made to be enjoyed.
