Vinification: From the ancient drying methode (about 4 months), in the second half of january grapes are gently pressed and destemmed and fermentation takes place in stainless steel tanks at a controlled temperature of about 14°C for about 50 days, after 30 days of maceration on the skins.
Analysis: 15.5% % Alcohol - 2.50 g/l Sugar, 5.48 g/l Acidity
Recommendation: It's ideal with braised meat, game and mature cheeses. It can also be enjoyed at the end of the meal. Serving at a temperature of 18°C. Open the bottle one hour before serving at room temperature.
