Vineyards
Grapes are selected in plots of 2.5 hectares in sandy loam soils with traces of lime and clay on slopes facing south-southwest at 380-400 metres above sea level. The vines are an average age of 17 years and have been trained in the Cordon method at a density of 4500 to 5000 per hectare.
Vinification & Aging
Grapes are soft-crushed and the must separated from the skins; fermented at 16-18° C for about 2 weeks in stainless steel tanks. The wine undergoes 100% natural maloladic.The wine, of about 13% alcohol, matures for 6 months on the lees in tanks before being bottled and cellared until release.
Style & Marturity
Chamonix Chardonnay on release has a bright straw colour with greenish highlights and an intense aroma that recalls ripe apples, lime and pears with hints of herbs and tropical fruit. Bright and steely dry in flavour, the grapefruit and spice sensations are buoyed by zesty acidity that refreshes the palate through a smooth finish.

Vineyards
Boasting some of the highest planted vines in the Cape Winelands, Chamonix has around 50 hectares under vineyard. As purists we have always believed that to produce a wine of true character, it is essential that nature be the primary winemaker. Our farm is blessed with cool breezes during the hot summer months and stony, clay-rich soil, giving our wines their unique personality and style. A philosophy of minimal intervention and environmentally conscious farming methods are just some of our secret ingredients. All our fruit is hand-selected, and we follow traditional methods such as making use of spontaneous fermentation and no acidification. Organic compost and mulch are ploughed back into the soil, while our use of green-harvesting (low yields per hectare) ensures that our vineyards are not over-produced. Our philosophy of working hand-in-hand with nature to create unique wines and spirits carries through into the cellar, where our small, hands-on team approach their work with passion and creativity. The end result is a product that is pure, natural and made to be enjoyed.
