100% Sauvignon Blanc

Vineyards

Grapes are selected from 2 plots of 5 hectares in Greywacke soils at 450 metres above sea level on south west facing slopes. The vines of an average age of 16 years, are planted at a density of 5000 vines per hectare and trained in the Cordon method.

Viniication & Aging

Grapes are soft-crushed and the must chilled overnight before fermentation at 15-18° C for 20 days in stainless steel tanks. 2% of the wine was fermented in Hungarian oak barrels before being blended back into stainless steel components. The wine will spend about 7 months on the lees in tanks, after which it is fined, filtered and bottled.

Style & Marturity

On release our Sauvignon Blanc shows a pale straw colour with greenish highlights and ample yet refined aromas with scents reminiscent of tropical fruit and lemon grass, with figs and pomelo grapefruit on the palate. It is full and round with rich fruit sensations balanced bybracing natural acidity.

Vineyards

Boasting some of the highest planted vines in the Cape Winelands, Chamonix has around 50 hectares under vineyard. As purists we have always believed that to produce a wine of true character, it is essential that nature be the primary winemaker. Our farm is blessed with cool breezes during the hot summer months and stony, clay-rich soil, giving our wines their unique personality and style. A philosophy of minimal intervention and environmentally conscious farming methods are just some of our secret ingredients. All our fruit is hand-selected, and we follow traditional methods such as making use of spontaneous fermentation and no acidification. Organic compost and mulch are ploughed back into the soil, while our use of green-harvesting (low yields per hectare) ensures that our vineyards are not over-produced. Our philosophy of working hand-in-hand with nature to create unique wines and spirits carries through into the cellar, where our small, hands-on team approach their work with passion and creativity. The end result is a product that is pure, natural and made to be enjoyed.
