Complex and broding,this wine is tightly structured, showing concentrated essence of black fruits and cassis cordoned by tight grained oak and long lingering sweet tannins. This wine will age gracefully and elegantly.
Viticulture: Machine Harvested in the cool of the early morning
Vinification: De-stemmed, the juice is inoculated with selected yeast for fermentation to begin. Fermentation in small open tanks for 7/8 days on skins. Juice run off with the skinns being airbag pressed.The wine is transfered to oak hogheads to finish fermentation, racked of gross lees then into French oak for 24 months maturation, filtered and bottled.
Analysis: 14.00 % Alcohol - 1.8 g/l Sugar, 7.03 g/l Acidity Recommendation: Serve with rich red meats, game, casseroles and stews in particular, beef or pheasant dishes. Also good with all kinds of cheeses and even very dark chocolate
