VINEYARDS
Champagne H. Blin’s vineyards are located in and around the village of Vincelles, in the Marne Valley, and cover 120 hectares of Pinot Meunier Chardonnay and Pinot Noir. Here the Pinot Meunier is king, giving a unique and surprising taste to the champagne with its subtle freshness and fruitiness. All our champagnes are made from grapes grown from our own vineyards with full control of the production from the vine to the consumer.
TECHNICAL DATA
BLEND 50% Pinot Meunier and 50% Chardonnay
VINTAGE 100% 2008 vintage.
AGEING Cellared in March 2012, left on the lees for 7 years minimum, 100% stainless steel.
DOSAGE Brut, 7g/l. Disgorged 3 months minimum before release.
ORIGIN Marne Valley, village of Vincelles.
ALCOHOL 12.5%.
EXPOSURE South exposure.
SOIL Rich & fertile, clay siliceous soils with limestone.
CLIMATE Mainly oceanic but also continental.
VINES 40-50 years old.
CULTURE Ecological, respect of the soil, sustainable viticulture.
WINE-MAKING
Pneumatic pressing in the hours immediately following hand-picking. Fermentation in temperature controlled stainless steel vats to preserve fruitiness and freshness. Malolactic fermentation completed. Light filtration. Natural racking. No fining.
TASTING NOTES
Appearance : Bright golden colour. Abundant and very fine bubbles.
Nose: Aromas of stewed apples with a hint of toast.
Palate: Flavours of toasted bread and prunes.
Food Pairing: Rich aperitif. Delicious with duck, suckling pig or fig tart.
Service: Best served between 10-12°C.
